Virginia Lee had been cooking since age seven. She observed and experimented with Chinese recipes during her extensive travels over China with her family, and after her marriage to Kuang Chao Lee, manager of the Hong Kong and Shanghai Bank. Due to her husband’s position and interest in fine food, many of the finest chefs in China cooked in their kitchen, and furthered her education. After coming to the United States in 1967, she quickly developed the reputation as one of America’s foremost Chinese chefs.
Over a two year period, Virginia Lee worked with Craig Claiborne in his East Hampton’s home kitchen, to clearly and explicitly explain how 250 well know Chinese dishes could be prepared by most American cooks without undue work.
The book is both thorough and easy to understand, written clearly and explicitly to educate even the novice cook. Recipes are categorized by their main ingredient (pork, chicken, beef, seafood, et cetera) with a chapter on desserts.
It provides considerable practical advice about kitchen equipment, methods, and proper cooking techniques, such as the proper ways to carve and present meat. It concludes with a detailed list and description of Chinese ingredients.

There are some great recipes here some of which are not typical chinese american fare. I cant wait to dive into them. Craig clairborne needs no buildup so you can trust this book. It is out of print a long time and you should grab a used copy without hesitation while they are available. I am looking forward to the stir fry shrimp noodles with crabmeat and the spring rolls recipe looks tasty. Most of the recipes do not look difficult at all and appear worthy of investing the time to put them together. You will need to have an asian pantry if you dont have one already. Read the book make a list and locate your sources for supplies. Why pay exhorbitant prices to a chinese take out when you can have better at home? Modify salt and fat to your specifications and know the quality and freshness of whats inside. There are some standard restaurant fare and better yet some recipes you wont find on a typical menu. I just bought a pastry bag with nozzles so i can do the shrimp noodles right and i am deciding on which asian markets to hit. This is going to be interesting and fun. Chinese food is not hard and it is cheap to indulge in unless you are paying a restaurant or take out joint. This cookbook is a must have in my house. So many recipes. So glad I bought this and fast shipping.
This is an outstanding book. It far outstrips every other Chinese cookbook, including some very good ones by Irene Kuo, Ellen Schrecker, and others. I've been cooking out of it for 20 years. Every recipe I've tried (and I've tried most of them) turns out extraordinary food. Don't bother with the other books. Get this one, if you can find it! The publisher who let this go out of print should be strung up by his thumbs. The world deserves better! A billion stars!

This is my second purchase, as my first was destroyed by fire. You will not find a better, or more thorough chinese cookbook on the market. If you want to learn real chinese cooking, and not the americanized stuff you find in most restaurants, you will not find a better resource.
I used this recipe book in the 1960's. It got lost and I was trying to recreate one of the recipes, when I saw it on , and realized I could have immediate satisfaction and go on with my cooking. Great luck, and a good and useful book.
This is one of the best cookbooks I have had over 30 years, and bought one for a family member. I wold recommend it for anyone who loves Chinese food. Make your own...it's better than take-out!
So glad I found this cookbook. I had it years ago and it caused me to stop going out to Chinese restaurants because what I was cooking using this cookbook was so much better than anything I could get at a restaurant. I lost the book when I moved many years ago and recently have gotten back into cooking, so I started looking for this cookbook. I guess it is out of print, but I found a used copy in good condition.
